What Turkish delight is

Classic lokum is made by cooking sugar and starch into a smooth gel, then flavouring, cutting and dusting the pieces to prevent sticking. Rose, lemon and mastic are traditional flavour directions, while pistachio, hazelnut, walnut, pomegranate and other modern combinations add texture and variety.

The English name “Turkish delight” covers a wide spectrum of lokum. Some pieces are small and lightly flavoured, while premium styles may be rolled, layered, packed with nuts or coated in coconut or other ingredients. The basic confection remains recognisable, but the amount of filling and the size of the piece can change the eating experience substantially.
